Ingredients
500g streaky pork belly
3 green shallots
5 blocks of dried hawthorn
1 block of brown sugar
2 tablespoons of dark soy sauce
1 tablespoon of light soy sauce
1 teaspoon of salt
1 teaspoon of sugar
1 piece of ginger, sliced
2 cloves of garlic, minced
2 star anise
1 cinnamon stick
1 teaspoon of cumin seeds
3 small pieces of dried chili peppers
20 grams of rock sugar
3 tablespoons of Chinese cooking wine
1 tablespoon of vegetable oil
Instructions
Prepare the Ingredients:
Cut the green shallots into two segments at the junction of the white and the green, then cut the white segment into many sections and the green segment into small pieces.
Prepare the other ingredients as listed above.
Sauté Pork Belly:
Heat the vegetable oil in a pot.
Add the pork belly pieces and fry over medium heat until golden brown on all sides.
Remove the pork belly from the pot and set aside.
Stir-fry Aromatics:
In the same pot, add the ginger slices, garlic, star anise, cinnamon stick, and cumin seeds.
Stir-fry until fragrant, then add the dried chili peppers and rock sugar.
Add Sauce:
Pour in the dark soy sauce, light soy sauce, salt, and sugar.
Stir well to combine and cook for another 5 minutes to allow the flavors to meld.
Return Pork Belly:
Place the fried pork belly back into the pot.
Add the Chinese cooking wine and enough water to cover the pork belly.
Simmer:
Bring the mixture to a boil, then reduce the heat to low.
Cover and let it simmer for about 40 minutes, or until the pork belly is tender and flavorful.
Reduce Sauce:
Once the pork belly is cooked, uncover and let it simmer until the sauce thickens slightly.
Serve:
Transfer the红烧肉to a serving dish and enjoy!
